Ingredients:
- 1 cup shredded sweetened coconut flakes
- 3/4 cup pitted dates
- 1/2 cup coconut oil
- 1/2 cup raw honey
- 4 large avocados, peeled and pitted
- 2 whole limes(you will need to zest one lime to make 1/4 cup lime zest)
- 1 tbsp sea salt
- 1 tbsp vanilla extract
Directions:
1.) For the crust: Combine coconut flakes, dates, and coconut oil in a blender(I used my Vitamix) and blend until dates, coconut flakes, and coconut oil are combined together well. They should form a small ball.
2.) Once the crust is blended, spray 9” inch pie pan with non-stick spray. Scoop out crust mixture into pie pan and press evenly into the pan.
3.) Add avocado, honey, 1 freshly squeezed lime, sea salt, and vanilla to blender.
4.) Blend until avocado mixture is creamy.
5.) Pour avocado mixture into large mixing bowl and add 1/4 cup zest from the fresh lime.
6.) Pour mixture into pie crust and spread evenly with a spatula. Optional: garnish with fresh coconut and small date pieces.
7.) Set pie in freezer for 3 hours or until solid.
8.) remove from the freezer and let sit at room temperature for 30 minutes before cutting and serving.
9.) Store in an airtight container in the freezer if you have leftovers, it should last for about a week in the freezer.
