- 2 pounds 90% lean ground beef
- 1 bag of frozen mixed peppers and onions
- 1/2 cup BBQ sauce
- 1/2 cup ketchup
- 3 whole eggs
- 1 1/2 cups whole oats
- 1 tbsp each: sea salt, black pepper
- 1 tbsp garlic powder (or to taste)
For the sauce to pour over the muffins:
1/4 cup ketchup
1/4 cup BBQ sauce
1.) Preheat oven to 350 degrees and grease muffin pan with coconut oil.
2.) Thoroughly combine all ingredients (except the sauce items).
3.) In a separate bowl mix together the BBQ and ketchup for the sauce.
4.) Form medium-sized balls that will fit into your muffin pan. You should get about 12 single-serving muffins out of this recipe.
5.) Once muffins are in the pan, spoon about 1 tbsp of the BBQ and ketchup mixture over each muffin.
6.) Bake for 35 minutes, or until cooked throughout.
